Position Summary
The General Manager (GM) oversees all aspects of dining and service operations, including the service and culinary teams, daily planning, financial duties, beverage program management, labor monitoring and scheduling, beverage ordering, purchasing administration, and oversees general supplies. The General Manager role at Scratch Restaurant Group is guest-facing, and substantial amounts of the daily expectations will be guest-centered. Additionally, the General Manager is responsible for maintaining hygiene and sanitation, as well as managing employee retention, training, and development. These duties are performed to ensure alignment with the company's culture and values.
The General Manager's role is to primarily support the Chef de Cuisine (and vice versa) and to oversee daily service and the Beverage Program directly. The GM must demonstrate strong management and leadership skills, guest service mastery, have the ability to make quick and fair decisions, and uphold a solid work ethic. This position is responsible for different tasks involved in running the restaurant, including guest service, managing labor and beverage costs, evaluating guest experiences, maximizing staff retention, and scheduling. It also requires flexibility to work and attend special events. Additionally, the GM must be available on-site, via email, or by phone to handle urgent restaurant or business issues.
Average weekly work hour expectations: 45-55 hours per week
Duties:
- Ensure each guest receives excellent service by creating a warm and welcoming environment, including greeting and acknowledging every guest, and maintaining high standards. This requires thorough product knowledge, a solid understanding of service mechanics, and all other aspects of guest service.
- Responsible for the Beverage Program—wine (where applicable), sake, whiskey, and cocktails.
- Communicate concisely with the Chef de Cuisine and team regarding protocol changes, menu knowledge, beverage information, and service updates. Conduct performance improvement plans and/or disciplinary actions when necessary.

- Perform regular employee evaluations.
- Coordinate with Human Resources to ensure proper onboarding of new employees. Prepare FOH shift schedules every two weeks.
- Handle guest issues or complaints promptly, professionally, and politely as they occur.
- Respond to general inquiry emails (specific to their home location), questions, and return voicemails quickly.
- Communicate with the Reservations Department. Consistently monitor guest reservations daily, weekly, and monthly.
- Oversee maintenance of the restaurant and ensure compliance with safety and hygiene standards.
- Manage FOH/BOH hours for payroll, including reviewing clock-in/out times, breaks, overtime, PTO, and sick leave.
- Be responsible for ordering and inventory management.
- Possess intermediate computer skills—familiar with Google Suite, including Google Drive, Sheets, Docs, and Gmail.
- Handle daily invoice processing.
- Understand daily sales, labor, and beverage costs. Strive to meet the designated percentage and educate the team on cost control.
- Complete, implement, and carry out assigned tasks, projects, and duties as directed by Management.
Minimum Requirements
- Maintain professionalism at all times when outside of work and in social settings (including all social media outlets), understanding that you represent the Scratch Restaurant Group.
- Demonstrate the ability to multitask and prioritize projects and tasks.

- Proficient in Outlook, Microsoft Office Products and Mac OS
- Proficient in Tock and Toast preferred but not required
- High school equivalent mathematical skills
