Escape the everyday. Join Scratch Restaurants as our Head Sushi Chef in Encino, and make the space your own.

Every Scratch restaurant is independent and unique, tied together by one thing: an artisanal, from-scratch approach to hospitality. We hold ourselves to an incredibly high standard, and we get there together, with respect, communication, and a drive to keep getting better. That includes the person at the top.

Our culture
  • We chase excellence. Innovation, commitment, and uncompromising quality.
  • We lead by example. The team keeps getting better, and that includes you.
  • We respect each other. Kitchen, managers, directors, and ownership work as one team.
  • We always improve. Bring your ideas to every team meeting.
  • We’re going places. Recognized locally and nationally, and soon internationally.

Your restaurant, your ownership
We’re open seven days a week, and you won’t work every service. But this is your restaurant either way. Build a team and systems strong enough that the standard holds on your days off, and take responsibility for the space whether you’re there or not.

Who you are
You’ve run a high-end restaurant, and you’re comfortable front and center with guests. You lead with little hand-holding, think fast, and care about delivering an exceptional experience every night.

What your days look like

  • Run the show. Lead the team and work service on your scheduled days, on the line and not in the office.
  • Own the space. Set the standards and train the team so every shift runs the way you would run it.
  • Host the night. Welcome guests at the start and send them off at the end.
  • Build the team. Partner with the GM on training, retention, and a culture people want to stay in.
  • Guard the quality. Own receiving, inventory, and purchasing with your GM or AGM.
  • Know your numbers. Review the monthly P&L, hit yearly budget goals, and take 100% responsibility for quality and success alongside upper management.
  • Keep it running. Schedules, reports, paperwork, and performance appraisals, all on time.
  • Pitch in. Support the team wherever needed.

What we’re hoping you’ve got
  • Leadership chops. Supervisory experience (required), plus time as a Sous Sushi Chef or in a comparable leadership role.
  • The reps. 5+ years in a professional, hospitality-driven restaurant.
  • An owner’s mindset. You take responsibility for results, even when you’re not on the line.
  • Safety certifications. Safety, sanitation, and food handling, including a Food Protection certificate from your local health department.
  • Well-rounded skills. Strong English, communication, math, and computer skills.
  • Stamina. Ready for 12-hour days on your feet and lifting up to 50 lbs.
  • Polish. A neat, clean, professional appearance.
  • A cool head. You solve problems in real time, mid-service.
  • Independence. You lead a team with little to no guidance.

What’s in it for you
This position is full time with weekly overtime available!!!
  • Ownership of the space. Your restaurant, your standards, your team.
  • Full coverage. Health, dental, and vision insurance.
  • Paid time off. Time to recharge.
  • A 401(k). Plan for the long run.
  • Dining discounts across Scratch Restaurants.
  • Real growth. Career advancement with a company that’s expanding.

U.S. Equal Opportunity Employment Information (Completion is voluntary)

We are an equal opportunity employer and all qualified applicants will receive consideration for employment without regard to race, color, religion, sex, national origin, disability status, protected veteran status, or any other characteristic protected by law.

You are being given the opportunity to provide the following information in order to help us comply with federal and state Equal Employment Opportunity/Affirmative Action record keeping, reporting, and other legal requirements.

Completion of the form is entirely voluntary. Whatever your decision, it will not be considered in the hiring process or thereafter. Any information that you do provide will be recorded and maintained in a confidential file.

Form CC-305
OMB Control Number 1250-0005
Expires 4/30/2026

Why are you being asked to complete this form?

We are a federal contractor or subcontractor. The law requires us to provide equal employment opportunity to qualified people with disabilities. We have a goal of having at least 7% of our workers as people with disabilities. The law says we must measure our progress towards this goal. To do this, we must ask applicants and employees if they have a disability or have ever had one. People can become disabled, so we need to ask this question at least every five years.

Completing this form is voluntary, and we hope that you will choose to do so. Your answer is confidential. No one who makes hiring decisions will see it. Your decision to complete the form and your answer will not harm you in any way. If you want to learn more about the law or this form, visit the U.S. Department of Labor’s Office of Federal Contract Compliance Programs (OFCCP) website at www.dol.gov/ofccp.

If you believe you belong to any of the categories of protected veterans listed below, please indicate by making the appropriate selection. As a government contractor subject to Vietnam Era Veterans Readjustment Assistance Act (VEVRAA), we request this information in order to measure the effectiveness of the outreach and positive recruitment efforts we undertake pursuant to VEVRAA. Classification of protected categories is as follows:

A "disabled veteran" is one of the following: a veteran of the U.S. military, ground, naval or air service who is entitled to compensation (or who but for the receipt of military retired pay would be entitled to compensation) under laws administered by the Secretary of Veterans Affairs; or a person who was discharged or released from active duty because of a service-connected disability.

A "recently separated veteran" means any veteran during the three-year period beginning on the date of such veteran's discharge or release from active duty in the U.S. military, ground, naval, or air service.

An "active duty wartime or campaign badge veteran" means a veteran who served on active duty in the U.S. military, ground, naval or air service during a war, or in a campaign or expedition for which a campaign badge has been authorized under the laws administered by the Department of Defense.

An "Armed forces service medal veteran" means a veteran who, while serving on active duty in the U.S. military, ground, naval or air service, participated in a United States military operation for which an Armed Forces service medal was awarded pursuant to Executive Order 12985.
